Hi Angela!

Yeah, you can see our coop in this post: http://jannamo.com/2011/03/30/the-chickens-day-out/

One tip for sure is don't put them too close to your house if you can help it. Ours live right outside our kitchen window and its not the best for the noise or the dust. But overall I highly recommend getting some chickens, it's surprisingly easy!

Get a book if you can to read up on the basics of chicken care and you'll be good to go, or there's a lot of info on this website: http://www.backyardchickens.com/

Ah, I love coconut flour pancakes, but those look particularly good. Coconut flour is magic in how little you need.

I'm awkward/inappropriate all the time, so no worries, just thanks for the good wishes. One day we'll have to have baby Osborne meet Uncle Gary. The kid will love you cause you'll be all strong and throw them in the air and stuff.

I'm usually awkward or inappropriate when it comes to discussing pregnancy/baby stuff so I'll just leave you with a little gift (that you probably are already aware of).

Hi Stacy,

No, the sauerkraut in the crock was always fine, and the glaze on the inside of the crock makes it water-tight. The water just collects underneath the crock from little dribbles that happen when we are refilling the air seal with water, and then that water would sit under the crock and mold. We've mostly solved the problem by putting a towel under the crock and shifting it on the counter every couple of days so the granite countertop can dry out.

Also, I think our kraut always seems to take 10 or 11 weeks to taste good, because we've always done such large batches.

Good luck with your sauerkraut-making, keep me posted!

hi - you posted a comment over on another blog about the porous bottom of your crock being susceptible to mold. is this because moisture from the kraut is actually leaking through the bottom of the crock? this is happening to mine, just a stoneware crock i picked up at goodwill and i thought it has a leak. i had it sitting on towel to make it easy to slide across the enameled metal table top it's sitting on but after picking it up to move it i noticed the towel was damp and covered in green fuzzy mold under the crock. the kraut tastes good after 3 weeks using the method from www.wildfermentation.com. any input is greatly appreciated and i am happy to have found your blog!

I think the smoking and actual cooking steps are completely different, but you could maybe do one right after the other. I do my "smoking" in the oven, but it's a long slow process to bring the belly up to 160 degrees and allow the smoke flavor to soak in. After it is smoked it is technically cooked and therefore safe, BUT it still looks and feels like raw bacon, you wouldn't want to eat it yet! When I cook bacon in the oven to eat, I cook it at 350, and that's when it gets all brown and crispy. So I guess I think if you're smoking it you'd probably still want to apply some higher heat at the end before you eat, whether that's in your smoker or elsewhere, I don't know.

Good luck, and let me know how it goes!
