Hi Amie,

We didn't worry about who brought what, we had enough people that we weren't worried about getting a good variety of food, and with the server in the kitchen, if two ceasar salads showed up, she could just hold one until the other one was gone and use the second to refresh the table.

As far as the invite itself, I believe we just included a line that said "The meal will be pot-luck. If you'd like to, please bring a cold or hot dish to share, the server will collect it from you on your way in." or something like that.

Hope that helps!

Michelle - I'm pretty sure our friend just melted chocolate chips and dipped the cooked bacon into it. This summer I made candied bacon ice cream a la David Lebovitz, which starts with something akin to what you're calling "Pig Candy". It was divine although perhaps a bit toooo rich.

Emma - We did hire waitstaff, I wouldn't recommend it without that help. They would take people's dish on their way in, so none of the guests had to manage getting their dish warmed up or keeping the table pretty. The waitstaff kept the dishes queued up in the kitchen and refreshed the buffet table as needed so it was always tidy and the food was hot. It cost a few hundred bucks to have it taken care of this way, and it was a lovely way to do it!

I would love to do a potluck, but we have huge families and it would be about 300 people in a large backyard type wedding. how did you organize your pot luck? also, both our sets of parents feel uncomfortable with this idea - did you meet resistance with this in your wedding?

Chocolate covered bacon, eh? I've heard of Pig Candy (bacon covered in brown sugar and baked), but not chocolate bacon...

Any chance of getting the recipe? (Please???)

Nice look! Go, Janna.

Okay, how about this:

Ghirardelli's "Double Chocolate" chocolate powder (few tbsp)
Half & half
Steamin' hot water
One tea bag of Mint tea
Decorate with fresh mint leaf (which I don't have at work)
