No, the sauerkraut in the crock was always fine, and the glaze on the inside of the crock makes it water-tight.  The water just collects underneath the crock from little dribbles that happen when we are refilling the air seal with water, and then that water would sit under the crock and mold.  We&#039;ve mostly solved the problem by putting a towel under the crock and shifting it on the counter every couple of days so the granite countertop can dry out.

Also, I think our kraut always seems to take 10 or 11 weeks to taste good, because we&#039;ve always done such large batches.

		<description><![CDATA[hi - you posted a comment over on another blog about the porous bottom of your crock being susceptible to mold.  is this because moisture from the kraut is actually leaking through the bottom of the crock?  this is happening to mine, just a stoneware crock i picked up at goodwill and i thought it has a leak.  i had it sitting on towel to make it easy to slide across the enameled metal table top it&#039;s sitting on but after picking it up to move it i noticed the towel was damp and covered in green fuzzy mold under the crock.  the kraut tastes good after 3 weeks using the method from www.wildfermentation.com.  any input is greatly appreciated and i am happy to have found your blog!
